I would like to make this for Christmas (I know I will need to get a candy thermometre :) )

Please share if you have a yummy recipe - I am looking for something like the inside of a Skor bar, or the inside of the Werthers candies that are covered in chocolate.

Here you go. You will need to buy a candy thermometer though. I also toast the almonds at 350 checking and turning them every few minutes. You can also toast an extra 1/2c of almonds, chop them and sprinkle them on top of the melted chocolate.

Shortcut Almond Roca
The Best of the Best - Vol. 1 (Page: 268)

The secret to this popular treat is owning a candy thermometer.

Ingredients:
1 Tbsp. corn syrup 15ml
1 1/4 cups white sugar 300ml
1 cup butter 250ml
1/4 cup water 60ml
1 1/4 cups toasted slivered almonds 300ml
3/4 cup chocolate chips 175ml

Instructions:
In a large heavy saucepan, gently boil syrup, sugar, butter and water until "hard crack" appears on candy thermometer, 300F (150C). Do not stir. This step takes at least 20 minutes. Remove from heat, add almonds and stir well. Spread on an ungreased cookie sheet and, before candy is allowed to cool, sprinkle with chocolate chips. As they melt, spread the chocolate chips evenly over the candy. Cool in refrigerator or freezer. Break into bite-sized pieces and hide some. Whatever you leave out disappears! (This does not double well.)

Thanks for the great recipe, Jen :-D ..Made it tonight - super easy and though I haven't tasted (yet - oh, but I will, you can count on that), it looks delicious and I know will be absolutely fabulous (used Bernard Callebaut milk chocolate chips! - and I used more than 3/4 cup, that's for sure :lol: )

Thanks again! This is going to be a big hit (along with the dark chocolate truffles I also made today) at our Christmas baking exchange this weekend. :D

How well does the almond roca keep? In other words, how far in advance of Christmas can you make it?

I'm assuming it really wouldn't freeze well at all.

I have never tried freezing it because I would be worried the chocolate would turn white. I refrigerate it and it's fine. I always start making it at the beginning of December and have never had any go bad.

OK, need some tweaking on this one....

My candy thermometer said keep point 2.5 inches deep without touching bottom, but recipe said large pot.....so I switched to med pot to make deeper... however, it still wasn't deep enough I guess as first sign I had that it was ready was the smell.....overcooking slightly.... took thermometer out of holder and held it diagonally and sure enough, it started rising higher.....

Is my candy thermometer just a bad one and I should get a better one? How do you do it???

It's ok, but does taste a bit overcooked... :|

I start measuring the temp when it turns a golden colour. I have to tip my pot to do it as well.
