Well, I know what we'll be having two nights this week...I'll be buying a large package of lean ground beef and 1/2 will go for taco night and the other 1/2 will be put into spaghetti sauce to make it a meat sauce. The meat sauce actually lasts for a few different meals throughout the week.

This is what I have so far....

Sunday - Roast beef dinner (This may or may not happen as I am battling a migraine today)
Monday - Curried Orange chicken with potatoes and veggies
Tuesday - Baked potato night (I make baked potatoes and put out a variety of toppings... I usually have chili in the freezer and freeze small amounts for just such an occasion)
Wednesday - Fetuccini Alfredo with chicken and tomato
Thursday - Chicken Nuggets for the kids... and we are still deciding for the grownups. :)

Sunday: pulled pork on buns, corn on the cob, and asparagus
Monday: homemade hamburgers, and salad
then hubby leaves and is gone for the rest of the week, so it's just me and the kids...
Tuesday: blueberry pancakes and broccoli
Wednesday: spaghetti with olive oil and herb/garlic epicure seasoning, frozen peas
Thursday: homemade macaroni with veggie wieners
Friday I work until late, so likely will be cream of wheat, or oatmeal. LOL!!! Kids love it though.

Made a lasagne in the crockpot last week and it was good for three meals! DH and DS liked it but I thought the noodles were on the mushy side. That's as much of a plan as I do. In our house you have two choices for dinner: take it or leave it!

Crockpot Lasagne:
1 lb lean ground beef
1 onions, chopped
veg (package of frozen spinach, sliced mushrooms, or ???)
2 garlic cloves, smashed
1 (28 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 teaspoons salt
1 teaspoon dried oregano
1 (12 ounce) cottage cheese
1/2 cup gratedparmesan cheese or asiago cheese
1 (12 ounce) regular lasagna noodles, uncooked
1 (16 ounce) shredded mozzarella cheese

Directions:
Prep Time: 15 mins
Total Time: 4 1/4 hrs
Brown ground beef, onion, veg, and garlic in frypan. (night before)
Add tomato sauce, tomato paste, salt and oregano.
Spoon a layer of meat sauce onto the bottom of the slow cooker.
Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses.
Repeat with sauce, noodles and cheeses until all are used up.
Cover and cook on low for 4 to 5 hours. Pour 1 ½ cups water around edges to prevent sticking.

Shopgirl would love your curried orange chicken recipe please :D

Shereen - fondues are sooooo much fun.... The kids had their first one earlier this year. The trick is also to have lots of bowls of stuff that doesn't have to be cooked to munch while waiting - though having the raw veggies usually does the trick....but cubes of ham is nice too. It held their interest for ages - they didn't get bored with the long meal at all.

Not too much meal planning here yet, but last week we had:

Spaghetti (using leftover frozen sauce from last time which included zucchini & carrot)
Bangers, mash & veggies (ds's choice for dinner - actually was honey garlic sausages...yum). He chose this over going to a restaurant!
Made big pot of chili with lots of food processed veggies added (like onion, carrots, snap peas, broccoli, peppers) together with the usual kidney beans, which will do us a meal again this week. I also added chickpeas for the first time and everyone thought it was great. Will make some good school lunches too.
Swiss Chalet last night as all home late. Leftovers for chicken sandwiches at school today.
Pork chops tonight, possibly floured and fried or baked in soup though instead of the usual summer bbq., with little steamed potatoes and steamed broccoli & carrots.
Dh wants meatloaf (CharleneK's), but I may be ground-beefed out...we'll see.
Thinking either potstickers or spinach & cheese stuffed pasta later this week.

Sunnygirl - what did you serve with the fondue? To dip, I mean.
