I'm looking for some new stuff to make! Any awesome recipes to share I'd love to see them :)

I'm going to attempt candy cane bark (dark/white chocolate layered).

My husband was suppose to fly home on the 15th but now not til the 22nd so I have an extra 5 days to bake!

These are my favourite!!!


Triple the Ginger Cookies
• 3/4 cup butter
• 1 cup packed brown sugar
• 1 egg
• 1/4 cup molasses
• 2 1/4 cups all-purpose flour
• 2 teaspoons ground ginger
• ½ teaspoon nutmeg
• ¼ teaspoon ground cardamom
• 2 teaspoons baking soda
• 1/2 teaspoon salt
• 1 1/2 tablespoons minced fresh ginger root
• 1/2 cup chopped crystallized ginger
• Granulated white sugar for coating
DIRECTIONS
1. In a large bowl, cream together the butter and brown sugar until smooth. Beat in the egg and molasses. Combine the flour, ground ginger, nutmeg, cardamom, baking soda, and salt; stir into the molasses mixture using a wooden spoon. Mix in the fresh and crystallized gingers. Cover, and refrigerate dough for at least 2 hours, or overnight.
2. Preheat oven to 350 degrees F (175 degrees C). Shape dough into 1 inch balls, roll in white sugar, and place about 2 inches apart onto ungreased cookie sheet.
3. Bake for 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks.

NUTMEG MELTAWAYS (they made it into this month's Island Parent!)

Preparation Time: 1 hour approx.
Number of servings: 3 dozen

INGREDIENTS:
1-cup butter (no substitutes)
½ cup sugar
1 tsp vanilla
2 cups flour
¾ cup ground almonds, toasted
1-cup icing sugar
1 tbsp ground nutmeg

INSTRUCTIONS:
In a mixing bowl, cream the butter, sugar and vanilla together
Gradually add the flour; mix well
Stir in the almonds and shape into 1” balls
Place 2” apart on ungreased cookie sheets
Bake at 300º F for 18-20 minutes, or until bottoms are lightly browned
Cool on wire racks
Combine icing sugar and nutmeg; gently roll cooled cookies in sugar mixture.

** These are excellent for the holiday season, very festive tasting!**


SHORTBREAD COOKIES


Preparation Time:1 hour or so
Serves: 48

INGREDIENTS:
1-cup cornstarch
1-cup icing sugar
2 cups flour
1½ cups soft butter (no substitutes!)
grated fresh lemon rind or chopped crystalized ginger (if desired)

INSTRUCTIONS:
Sift the cornstarch, icing sugar and flour together
Cut in the butter with a fork, until crumbly
If too soft, cover & chill for 1-hour
Form into 1” balls, then press with a sugared fork
Bake at 300º F for 15-20 minutes

Made them!! I added in some Epicure Chai Spice to the batter, and just dusted the tops of the cookies with the icing sugar/nutmeg mix. SO GOOD!!

The nutmeg meltaways recipe was my "bake for the neighbours" recipe this year and it received rave reviews! It's definitely become a fav in our house. We've eaten a lot :oops:
