Dense Muffins?

Postby aims on Sun Jan 13, 2013 11:54 am

I am looking for a recipe for some dense muffins. I am assuming they would be made with oatmeal? Does anyone have a recipe?

BIG BATCH BRAN MUFFINS

Number of servings: 3-4 dozen large

INGREDIENTS:
3 cups natural bran 3 cups all bran cereal
2 cups boiling water 3 cups buttermilk
1½ cups sugar 1 cup vegetable oil
1 cup fancy molasses 4 eggs, beaten
3 cups flour 1 cup shredded coconut
½ cup wheat germ ½ cup ground flax meal
1 tsp vanilla 2 grated carrots
2 cups whole wheat flour 5 tsp baking soda
1 tbsp salt 2 cups raisins or chopped dates

INSTRUCTIONS:
In a large bowl, combine the natural bran and the all bran cereal. Stir in the boiling water to moisten; let cool for 10 minutes.
Stir in the buttermilk, sugar, oil, molasses and beaten eggs.
In a separate bowl, combine the flour, baking soda, and salt. Mix in the raisins. Add to the bran mixture, stirring until evenly mixed. Cover and tightly refrigerate for up to 1 week.
Spoon batter into greased or paper-lined muffin cups, filling to the top. Bake at 375º F for 25 minutes.

You are most welcome - they are one of my favourites (and I normally don't enjoy bran muffins).
