Hi there
I am trying to make meals a little less complicated and think it would be good to do a stir fry once a week. I would love your recipes, please! :D It doesn't matter whether they are chicken, beef, tofu or anything else. Just veggie is fine too.

SPICY KUNG PAO CHICKEN


INGREDIENTS:
Marinade: 1 tbsp cooking sherry 1 tsp soy sauce

Sauce: 1 tsp cornstarch ¼ cup water
1 tsp chili paste 2 tbsp soy sauce
1 tbsp cooking sherry 1 tsp red wine vinegar
1 tsp sugar 1 tsp toasted sesame oil

Main: 1 tsp grated ginger 2 green onions, sliced
½ cup roasted peanuts 4-5 chilies, to taste
oil 1.5 Lb chicken breast

INSTRUCTIONS
Cut up chicken into cubes, place in marinade mixture for 5 minutes or longer.

Combine sauce mixture and set aside.

Heat up 1 tbsp oil in hot wok, and cook chicken pieces until done; set aside.

Heat up 1 tbsp oil in hot wok (fan on high too!) and cook peanuts & chilies together until golden. Remove.

Heat up 1 tbsp oil in hot wok, add chicken and peanut mixture. Add green onions and ginger.

Add sauce mixture and boil until thick. Serve over white rice.

CURRY FRIED NOODLES


INGREDIENTS

4 tbsp oil 2-3 tbsp curry paste
8 oz chicken breast, 1” cubes 8 oz green beans, 1” lengths
12 oz rice vermicelli, soaked & drained 1 red pepper, fine strips
1 tbsp soy sauce salt & pepper to taste
2 green onions, diced fine 2 red chilies, diced fine (or 1 jalapeno)
½ lime, for the juice ½ cup chopped roasted peanuts
Chopped fresh cilantro

INSTRUCTIONS

Hat half the oil in hot wok, add curry paste and cook for 1 minute
Add the chicken and cook until done; remove with slotted spoon
Add remaining oil and green beans and red pepper; cook a few minutes until tender crisp
Drain the noodles and add to the pan. Stir-fry until heated through, then add the cooked chicken
Add the soy sauce, Salt & Pepper.
After plating, sprinkle each portion with the green onions & chilies, drizzle limejuice & peanuts overtop
Sprinkle some chopped fresh cilantro on top as well

Old topic, I know.
But whenever I do stirfry, I always do Tofu, hubby never complains because even he likes it!
I buy the locally made-on-the-island tofu, firm is best.
Cut it in half, squeeze out the water with paper towels between both your hands. Once it's dry, cut into small squares, toss in a container and dump in a bunch of spicy ingredients.
I usually throw in a dash of worseschire, some siracha sauce or hot chilli sauce (or even tobasco if that's all you've got), sprinkle of ginger powder, maybe some crushed garlic, and teriyaki sauce.
Then fry that up, leaving it to cook till it's got a nice crust on each side.
Then just add to your stirfry right at the very end! We like baby corn, a tin of pineapple, (my fave ingredient!) and beansprouts added in our stirfry too, and it always lasts for a few big meals!
This is a good idea, I need to get back to making stirfrys too, it's been a while but it's such a good dinner.
