Hit me with your best recipes that are thai peanut - I love love love it right now. Salads, wraps, crockpot - whatever you have - post it?

Thai Peanut Crockpot Chicken:

Take 3 or 4 chicken breasts and put in crockpot.

In a bowl, mix:

1 cup Peanut Butter
1 cup Salsa
1 tbsp each of lime juice, soy sauce, and grated ginger.

Mix together and pour over chicken. Cook on low about 4-5 hours. Serve over rice. I usually make bok choy as the side.

THAI CHICKEN THIGHS

INGREDIENTS:
8 chicken thighs, no skin
½ cup chicken stock
¼ cup peanut butter
¼ cup soy sauce
2 tbsp chopped fresh cilantro
2 tbsp lime juice
1 hot chili pepper, seeded & chopped
2 tsp minced fresh ginger
¼ cup chopped peanuts

INSTRUCTIONS:
Place chicken thighs in slow cooker.
In bowl, combine stock, peanut butter, soy sauce, cilantro, lime juice, chili pepper and ginger. Mix well and pour sauce over chicken.
Cover and cook on low for 6-8 hours. Garnish with more cilantro & chopped peanuts.



THICK CURRY IN SWEET PEANUT SAUCE


INGREDIENTS:
1 cup coconut milk
2 tsp Thai red curry paste
1.5 tbsp fish sauce
1 tbsp brown sugar
1 stalk lemon grass, bruised
250 g chicken or steak
¼ cup ground roasted peanuts
½ red chilli, sliced
2 lime leaves, torn
s&p to taste

INSTRUCTIONS:
Put half the coconut milk in large pot and heat, stirring, until it boils & separates.
Add the red curry paste and cook until fragrant. Add fish sauce, brown sugar and lemon grass.
Continue to cook until colour deepens. Add the rest of the coconut milk and boil.
Add the meat and peanuts; stir & cook for 10 minutes or until most of the liquid has evaporated.
Add the chilli and lime leaves; adjust seasoning to taste, garnish with cilantro, serve over rice.

Crockpot Peanut Thai Chicken Lettuce Wraps

¼ cup of natural peanut butter
2 cloves of minced garlic
2 tsp of grated ginger
2 tbsp of soy sauce
1 tsp of sesame oil
½ tsp of Sriracha
¼ cup of chicken broth
4 frozen boneless, skinless chicken breasts
1 sweet pepper sliced thin
2 green onions sliced
12-15 whole leaves of lettuce


1. Mix peanut butter, garlic, ginger, soy sauces, sesame oil, Sriracha and broth.

2. Place frozen chick breast in bottom of Crockpot and pour peanut sauce over breasts

3. Cook on low for 6-8 hours or high for 3-4 hours

4. Shred chicken and add back about ¼ cup of the peanut sauce.

5. Serve on lettuce with green onions and peppers (or any other Thai fixings)
