Spaghetti (yay for making the sauce in the slow cooker yesterday so it's all ready). Green salad. Homemade buns.

Tonight (and tomorrow's leftovers) were baked coconut chicken, rice and steamed vegies.

It was the first time I'd tried the chicken recipe and it was great-the pickiest toddler tried it, said it was 'delightfully delicious' and didn't talk until he'd finished all his chicken.

We had Molto Bene Pork Loin Roast with steamed baby potatoes and steamed mix veg (carrots, broccoli & brussel sprouts) & greek salad

I just altered this recipe a bit for the Coconut Chicken.

Changed the shrimp to chicken fillets (the person who shared the recipe used prawns and said it was great too). I didn't add salt but added some of my Trader Joe's '21 Gun Salute' (sort of like a Mrs Dash type thing) into the coconut mixture for a little flavour but it wasn't necessary-next time I'm thinking a little ground roasted almonds would be great added into it.
