It was. Even re-heated in the microwave it was still really tasty-just not quite as crispy.

Easy Chicken Parmesan: Lay chicken breast in baking dish and cover with your fav tomato sauce. Bake at 375 until almost done. Last 15 minutes cover in grated parm and finish baking.

This will be served with pasta and steamed cauliflower

Not sure yet.
Last night I tried a new recipe - was a dinner bread pudding (strata) with sausages, spinach, mushrooms & cheese - was yummy! :)
Also made a rhubarb mandarin crisp for dessert - trying to use up my frozen fruit bounty. :wink:
