this one isn't fancy but is super easy

Mix
1.5 cups flour
1 tsp. baking soda
.5 tsp baking powder.

Blend 2 ripe bananas and add to it 2 eggs, one third cup of oil and 1 cup sugar

Stir in the dry ingredients.
Add chocolate chips or nuts if your heart desires.
Bake at 350 degrees for one hour in a well greased loaf pan.

This is my mom's recipe:

1 3/4 cups flour
2 tsp BP
1/2 tsp salt
1/4 tsp baking soda
1 cup mashed bananas (about 3)
1 tbsp lemon juice
1/2 cup chopped walnuts

Cream butter and sugar well.
Add egg and beat well.
Combine dry ingredients.
Add dry ingredients alternately with the bananas and lemon juice.
Stir in nuts.
Do not over mix.
Turn in greased 8x5x3 inch pan.
Bake at 350 degrees for 60 minutes or until tests done.
Remove and cool on rack.

I use this one all the time :)

Banana Bread
Ingredients

1/2 c sugar
1/2 c butter, softened
2 eggs
3 medium, very ripe bananas
1/2 cup buttermilk (I add 1 tbsp white vinegar to reg milk and let it sit 5 mins)
1 teaspoon vanilla
2 1/2 cups flour (I use whole wheat)
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired

1 Heat oven to 350°F. Spray cooking spray into large loaf pan.
2 Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.
3 Check loaf after 1 hour (may take another 10-15 mins - do not overbake!) Loaf is done when toothpick inserted in center comes out clean.

Have to add my go-to recipe too!! :). I cut the sugar in half or leave out completely if using chocolate instead of raisins.

Ingredients:

Dry
1 cup whole wheat flour (or a mix of whole wheat and white)
1/2 cup ground rolled oats
1/3 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup ground flax seeds
1/2 teaspoon cinnamon (or more)
1/4 teaspoon nutmeg
1/4 teaspoon clove
1 small pinch salt
Wet
1 cup mashed banana (3 small or medium)
1/3 cup unsweetened applesauce (1 of those small plastic 6 pk cups)
1 teaspoon vanilla
1 egg
2 tablespoons honey
1/2 cup organic raisins or chocolate chips. :)

Directions:

1 Preheat oven to 350°F.
2 Mix dry ingredients.
3 Mash bananas with a potato masher (if you have a fancier or better tool, go for it).
4 Mix with wet ingredients. (not raisins).
5 Mix wet ingredients into dry ingredients.
6 Fold in raisins. Try not to mix too much.
7 Pour into a 8x5 or 8x4 or 8x3 pan. Whatever you have on hand.
8 Cook about 45 minutes.

Here is the one I always use- very easy, very moist. Used to make it with the kids when I worked in daycare years ago.

1/2 cup margarine
1 cup sugar
2 large bananas
1 egg
1 1/2 cup flour
1 tsp. baking soda

Mix the margarine, sugar, egg and bananas in a bowl until creamy. Add the Flour and baking soda. Pour into loaf pans. Bake at 325 F for 45 to 55 minutes.
